CORN BIRIYANI

Ingredients

  • Corn Rice
  • Protein (chicken, mutton, or vegetables)
  • Aromatics (onions, ginger, garlic, green chilies)
  • Spices and herbs (bay leaves, cinnamon sticks,cardamon,cloved,star,anise,tumeric,red chili powder, cumin powder, coriander powder, garam masala, fresh coriander, and mint leaves.
  • Yogurt or curd.
  • Cooking oil or ghee.
  • Nuts and dried fruits (optional).
  • Nuts and dried fruits (optional).
  • Tomatoes (optional).
  • Water and salt.
  • Fried onions (barista).

Instructions

Step 1

(CHICKEN MARINATION) Ready 500g of Chicken, a few mint leaves, some coriander,800g of onions, 1tbsp of curry powder, 2 tsp of Chilli powder, 1/2 tsp of Tumeric, 5 tbsp of CURD, 1TSP OF SALT 2T TSP OF GINGER AND GARLIC PASTE.

Step 2

ADD AN ADEQUATE AMOUNT OF OIL TO THE PAN AND FRY 800G OF ONIONS UNTIL GOLDEN BROWN.

Step 3

Add 1 tsp of salt to the chicken, 2 tsp of ginger garlic paste, half a spoon of turmeric, 1 tbsp of curry powder, 2 tsp of chili powder, add 5 tbsp of curd, add fried onions, add handful of chopped coriander leaves, and mix well. marinate for 30 minutes.

Step 4

(for the rice) Wash corn rice thoroughly and rinse off excess water.

Step 5

Bring a pot of water to boil, add 2-3 bay leaves, half a teaspoon of cumin, half a teaspoon of cloves, half a teaspoon of cardamon, one cinnamon stick, add one green chili. Close the lid and bring the water to boil.

Step 6

When the water is boiling add 500g of washed corn rice, then add 2 tbsp of ghee.

Step 7

Add handful of chopped coriander leaves and mix well. Steam rice for 6-7 mins until 70% cooked, then drain excess water.

Step 8

Add the marinated chicken into a large pot, add the 70% cooked rice and even it out.

Step 9

Add 2 tbsp of ghee, close the lid tightly. Cook on high heat for 15 minutes and on medium heat for 20-30 min.
