CORN FRIED RICE

Ingredients

For the Corn Rice:

  • Corn Rice.
  • 4 cups of water.
  • Salt to taste.

For the Chicken:

  • cooked chicken, diced or shredded.
  • Salt and pepper to taste.
  • Garlic powder.
  • Paprika.

For the Stir-fry:

  • Cooking
  • oil(divided).
  • Small onion, finely chopped.
  • Cloves of garlic, minced.
  • Ginger, minced.
  • Mixed Vegetables (eg – carrots ,peas ,bell peppers, corn).
  • Green Onions.
  • Soy Sauce.
  • Oyster Sauce.
  • Sesame OIL
  • Salt and Pepper to taste.

Instructions

Step 1

Wash corn rice thoroughly and rinse off excess water.

Step 2

Pour water until it reaches 1.5 inches on top of your middle finger when your hand is placed on the corn rice.

Step 3

Heat your wok/pan and add 2 tbsp of oil.

Step 4

Add chopped shallots and garlic and Sauté well until golden brown.

Step 5

Add your choice of vegetables, Saute well for 30 sec on high heat.

Step 6

Add salt to taste and mix with 1 tbsp of pepper. Mix well.

Step 7

Add soy sauce 1tsbp, mix well.

Step 8

Add one bowl of cooked corn rice and mix well.

Step 9

Turn off the heat, add chopped spring. Mix well.
